In our experience, maintaining a set of metrics on how long specific tasks take (e.g., adding a control, building a page), along with their variances, as well as drawing on a library of prior art, makes fixed price bid far more manageable for both parties. Even more important is speed of development, which short circuits many, often most, of the second thoughts. That said, the customer has to be reasonably experienced and have a business focus, and the contractor should be able to give a live proof of concept demo up front, based on prior work. Otherwise, better to pass on fixed price.
